Kaak E'nakache كعكة النقاش

-Flour biscuits with a date past filling-

The below recipe is made vegan.

This recipe can be made gluten free just substitue the flour with GF flour, ideally one that has the same consistency as wheat flour.

Dough

Date filling

PREP

Date filling: mix the ingredients together and start creating thin sausage that are about the same diameter as a pencil. Set aside of your working table as you start working on the dough.

Dough: mix all ingredients together until you get a kneaded ball that is not too sticky and feels stretchy. If it feels too sticky add more flour until it's not. Create 2 or 3 smaller balls to make it easier to manage.

Grab a bit of flour and dust your surface and rolling pin and start stretching and rolling a ball to achieve a flat rectangle that is less than 0.5 centimeter in depth, i.e., you should be able to see your table's surface through the dough. It doesn't have to be perfect, you'll use a knife to remove the portions that don't fit perfectly in the rectangle and reuse it later with the other dough. Grab one of your date sausages that should be the same width of your rectangle, at the top of your rectangle edges and start rolling the dough on top of the date sausage until you get about 3 folds of dough. Once done, use a knife to cut the new rolled sausage. Afterwards, create a circular shape like a bracelet. you can leave it as is or decorate it by using a sharp knife to tear the top of the circle as if creating watch or whatever other designs you like.
